If left unchecked, mold and fungi can form mycotoxins\u2014toxic chemical products that are invisible to the naked eye.<\/p>\n<p>The most common mycotoxin found in coffee is <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4247821\/\" target=\"_blank\" class=\"mbg-track-event\" data-track-event-types=\"click\" data-track-type=\"article-link\" data-track-prop-element-id=\"in-body-link\" data-track-prop-label=\"page_type | element_id\" data-track-prop-category=\"Link\" data-track-prop-link=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC4247821\/\" rel=\"noopener\">ochratoxin A<\/a> (OA). A sampling of 60 coffees from Brazil found ochratoxin A in <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/14726276\/\" target=\"_blank\" class=\"mbg-track-event\" data-track-event-types=\"click\" data-track-type=\"article-link\" data-track-prop-element-id=\"in-body-link\" data-track-prop-label=\"page_type | element_id\" data-track-prop-category=\"Link\" data-track-prop-link=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/14726276\/\" rel=\"noopener\">20 of them<\/a> (33.3%), while <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/7759018\/\" target=\"_blank\" class=\"mbg-track-event\" data-track-event-types=\"click\" data-track-type=\"article-link\" data-track-prop-element-id=\"in-body-link\" data-track-prop-label=\"page_type | element_id\" data-track-prop-category=\"Link\" data-track-prop-link=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/7759018\/\" rel=\"noopener\">other studies<\/a> have identified the mycotoxin in nearly half of the beans analyzed.<\/p>\n<p>Seeing as it&#8217;s so common, ochratoxin A <a href=\"https:\/\/www.sciencedirect.com\/topics\/veterinary-science-and-veterinary-medicine\/ochratoxin-a#\" target=\"_blank\" class=\"mbg-track-event\" data-track-event-types=\"click\" data-track-type=\"article-link\" data-track-prop-element-id=\"in-body-link\" data-track-prop-label=\"page_type | element_id\" data-track-prop-category=\"Link\" data-track-prop-link=\"https:\/\/www.sciencedirect.com\/topics\/veterinary-science-and-veterinary-medicine\/ochratoxin-a#\" rel=\"noopener\">is considered<\/a> &#8220;one of the most important mycotoxins of worldwide concern for human health.&#8221; As the <a href=\"https:\/\/www.who.int\/news-room\/fact-sheets\/detail\/mycotoxins\" target=\"_blank\" class=\"mbg-track-event\" data-track-event-types=\"click\" data-track-type=\"article-link\" data-track-prop-element-id=\"in-body-link\" data-track-prop-label=\"page_type | element_id\" data-track-prop-category=\"Link\" data-track-prop-link=\"https:\/\/www.who.int\/news-room\/fact-sheets\/detail\/mycotoxins\" rel=\"noopener\">World Health Organization<\/a> explains, &#8220;Large doses of aflatoxins can lead to acute poisoning (aflatoxicosis) and can be life-threatening, usually through damage to the liver.&#8221; Research has also linked high amounts of ochratoxin A exposure to <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24874522\/\" target=\"_blank\" class=\"mbg-track-event\" data-track-event-types=\"click\" data-track-type=\"article-link\" data-track-prop-element-id=\"in-body-link\" data-track-prop-label=\"page_type | element_id\" data-track-prop-category=\"Link\" data-track-prop-link=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24874522\/\" rel=\"noopener\">chronic kidney disease<\/a>.
