In fact, research shows that the number of Americans who follow a vegan diet has increased <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC8210981\/\" target=\"_blank\" rel=\"noopener\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC8210981\/\">600 percent from 2014 to 2018<\/a>, while estimates also show that the global plant-based food market is expected to reach <a href=\"https:\/\/www.statista.com\/statistics\/1280394\/global-plant-based-food-market-value\/\" target=\"_blank\" rel=\"noopener nofollow\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/www.statista.com\/statistics\/1280394\/global-plant-based-food-market-value\/\">$78 billion by 2025<\/a>.<\/div>\n<p>One chef looking to pave the way for more accessible and delicious plant-based cooking is <a href=\"https:\/\/sobev.com\/about\/\" target=\"_blank\" rel=\"noopener nofollow\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/sobev.com\/about\/\">Horacio Rivadero<\/a>, the award-winning chef behind <a href=\"https:\/\/sobev.com\/\" target=\"_blank\" rel=\"noopener nofollow\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/sobev.com\/\">SoBe Vegan<\/a>, a fast-casual vegan restaurant in Miami, Florida, who is elevating the vegan culinary industry and reconceptualizing vegan dishes while paying homage to his South American roots.<\/p>\n<p>Ahead, Rivadero shares his thoughts on why plant-based cooking <em>doesn\u2019t<\/em> need to look or taste a certain way, despite what it was once made out to be: bland and boring. Instead, Rivadero is known for his delicious, vibrant Latin American vegan food\u2014that has plenty of <em>saz\u00f3n<\/em>\u2014<em>and<\/em> happens to be 100 percent plant-derived.<\/p>\n<p><figure id=\"attachment_1123063\" aria-describedby=\"caption-attachment-1123063\" style=\"width: 690px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-1123063 js-inline-lazy-load\" alt=\"latin american vegan food horacio rivadero\" width=\"690\" height=\"461\" src=\"https:\/\/www.wellandgood.com\/wp-content\/uploads\/2023\/10\/latin-american-vegan-food-horacio-rivadero_falsexfalse_true_70.webp\"\/><figcaption id=\"caption-attachment-1123063\" class=\"wp-caption-text\">Photo: SoBe Vegan<\/figcaption><\/figure>\n<\/p>\n<h2><strong>The biggest misconception about plant-based cooking, according to a vegan chef<\/strong><\/h2>\n<p>When thinking about Argentinian cuisine, the first thing that may come to mind is meat, and lots of it. After all, the country is widely known for its deeply-rooted <a href=\"https:\/\/viajes.nationalgeographic.com.es\/gastronomia\/por-que-asado-argentino-no-es-asado-cualquiera_18878\" target=\"_blank\" rel=\"noopener nofollow\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/viajes.nationalgeographic.com.es\/gastronomia\/por-que-asado-argentino-no-es-asado-cualquiera_18878\"><em>asado<\/em> culture<\/a> (Argentinian barbeque). So, when Rivadero (a born and raised Argentine) began dabbling in plant-based eating\u2014let alone cooking\u2014he found that there was <em>a lot<\/em> to learn. \u201cArgentina is a country where the food is based on a lot of animal protein. I remember eating meat seven days a week [growing up],\u201d Rivadero says.<\/p>\n<p>However, during the COVID-19 lockdown\u2014as many of us can relate\u2014he began experimenting with plant-based cooking. \u201cDuring the pandemic, I think everyone looked for a more conscious way to live and incorporate new habits. According to him, just about any recipe can be turned into a plant-forward meal.<\/p>\n<p>Something Rivadero admits he only learned through experimentation working with plant-based ingredients over time. \u201cAs a Latin American immigrant, I at first didn&#8217;t know much about plant-based cuisine. When I started cooking I was trained in a \u2018traditional\u2019 kitchen with meat. Then, I was introduced to a fully plant-based chef and felt I wanted to help and make plant-based recipes that are traditional in the Latine community,\u201d Rivadero says. Since then, he\u2019s made it his mission to make delicious plant-based cuisine with a secret ingredient: his Latine palate.<\/p>\n<p><figure id=\"attachment_1123065\" aria-describedby=\"caption-attachment-1123065\" style=\"width: 716px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-1123065 js-inline-lazy-load\" alt=\"latin american vegan food sobe vegan\" width=\"716\" height=\"477\" src=\"https:\/\/www.wellandgood.com\/wp-content\/uploads\/2023\/10\/latin-american-vegan-food-sobe-vegan-_falsexfalse_true_70.webp\"\/><figcaption id=\"caption-attachment-1123065\" class=\"wp-caption-text\">Photo: SoBe Vegan<\/figcaption><\/figure>\n<\/p>\n<p>According to Rivadero, there will always be hurdles to convincing folks to dapple in vegetarian dining\u2014but nothing a delicious dish or two can&#8217;t cure. \u201cEven today when I tell people what I do, [sometimes] their first question is: <em>Where is the protein? <\/em>I think that in the past a lot of people thought that a vegan diet was a salad with no flavor and no protein, and that comes from a lack of knowledge on plant-based dishes and ingredients.\u201d But Rivadero is hoping to change that common misconception one Latin American-inspired vegan dish at a time.<\/p>\n<p>\u201cIt&#8217;s a super friendly and fun way to introduce and educate others on this culinary category,\u201d Rivadero says. I always try to find similar textures that can be made in the most effective, conscious, and healthy way possible while adding new flavors.
