Use your thermometer to check the temperature of your milk, it should be around 190 degrees Fahrenheit.<\/p>\n<p>3. Slowly stir in your acid. The milk should start to curdle pretty quickly. Let this mixture sit until it reaches room temperature.<\/p>\n<p>4. Prepare your colander by lining it with cheesecloth or a clean kitchen towel.<\/p>\n<p>5. Then, stir any mix-ins you\u2019d like into your milk mixture and pour the mixture into your colander.<\/p>\n<p>6. Squeeze all the moisture out of your curds and add them to a large mixing bowl.<\/p>\n<p>7. Mix with salt to taste.<\/p>\n<p>8. Now you can optionally shape your cheese into a ball using your cheesecloth or a disc with two dinner plates. If you didn\u2019t add mix-ins directly to the cheese, now would be the time to roll your cheese in any herbs or seasonings you\u2019d like.
