Spray a mini loaf pan or a standard loaf pan and set aside.<\/li>\n<li>In a large bowl, whisk together the mashed bananas, eggs, Greek yogurt, maple syrup, olive oil, and vanilla extract until well combined.<\/li>\n<li>In a separate medium bowl, whisk together the oat flour, cinnamon, baking powder, baking soda, and salt.<\/li>\n<li>Add the dry ingredients to the wet, and use a wooden spoon to mix until well incorporated and the batter is somewhat smooth.<\/li>\n<li>In a small bowl, combine the granulated sugar and cinnamon for the cinnamon crunch topping.<\/li>\n<li>For mini loaves, use a 1\/2 cup to scoop the batter into each mini loaf. Then, sprinkle the cinnamon sugar mixture on top of each for the cinnamon crunch topping.<\/li>\n<li>If using a standard loaf pan, pour the batter into the prepared loaf pan. Then, sprinkle the top with the cinnamon sugar mixture.<\/li>\n<li>For mini loaves, bake for 28-32 minutes.<\/li>\n<li>For a standard loaf pan, bake for 45-50 minutes. If the top starts to about halfway through, add foil to the top.<\/li>\n<li>For both, bake until golden brown or until a toothpick inserted in the middle comes out clean.<\/li>\n<li>Let cool in the loaf pan for 10 minutes, then remove and transfer to a wire cooling rack.<\/li>\n<li>Serve with a spread of butter and a drizzle of honey, if desired.
