Red beans, otherwise known as azuki (or adzuki) beans.<\/p>\n<p>To learn more about this popular Japanese staple, its cultural significance, and one of the best ways to eat \u2018em, we caught up with <a href=\"https:\/\/www.justonecookbook.com\/about\/\" target=\"_blank\" rel=\"noopener nofollow\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/www.justonecookbook.com\/about\/\">Namiko Chen<\/a>, a Yokohama, Japan native and the founder of the widely acclaimed Japanese cooking platform, <a href=\"https:\/\/www.justonecookbook.com\/\" target=\"_blank\" rel=\"noopener nofollow\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/www.justonecookbook.com\/\">Just One Cookbook<\/a>, who shared her go-to, two-ingredient, red bean-rice dish packed with <a href=\"https:\/\/www.wellandgood.com\/beans-for-longevity\/\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/www.wellandgood.com\/beans-for-longevity\/\">longevity boosting benefits<\/a>.<\/p>\n<h2><strong>What\u2019s the significance of red beans in Japanese culture?<\/strong><\/h2>\n<p>According to Chen, red beans (aka azuki beans) have been a part of Japanese cuisine for centuries. \u201cAzuki beans are said to have been introduced from China around the third century, 300 B.C. to 201 B.C. There\u2019s also another theory that azuki beans were grown in Japan in the J\u014dmon period, 14,000 to 300 B.C.,\u201d Chen says. What\u2019s more, she explains that as Buddhism spread to Japan, eating animals did not align with this religious belief. As such, azuki beans were used in place of meat in many instances.<\/p>\n<p>Nowadays, you can find azuki beans in many different Japanese dishes. \u201cRed beans, or what we call azuki beans, are primarily used in various sweets in Japanese cuisine,\u201d says Chen. \u201cThese traditional sweets called wagashi are mostly filled with or accompanied by sweet azuki bean paste called <a href=\"https:\/\/www.justonecookbook.com\/how-to-make-anko-red-bean-paste\/\" target=\"_blank\" rel=\"noopener nofollow\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/www.justonecookbook.com\/how-to-make-anko-red-bean-paste\/\">anko<\/a> or an. The azuki beans are boiled, mashed, sweetened with sugar, and then used as fillings in <a href=\"https:\/\/www.justonecookbook.com\/daifuku\/\" target=\"_blank\" rel=\"noopener nofollow\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/www.justonecookbook.com\/daifuku\/\">daifuku mochi<\/a> [red bean-filled mochi], <a href=\"https:\/\/www.justonecookbook.com\/manju\/\" target=\"_blank\" rel=\"noopener nofollow\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/www.justonecookbook.com\/manju\/\">manju<\/a> [red bean steamed cake], and <a href=\"https:\/\/www.justonecookbook.com\/dorayaki-japanese-red-bean-pancake\/\" target=\"_blank\" rel=\"noopener nofollow\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/www.justonecookbook.com\/dorayaki-japanese-red-bean-pancake\/\">dorayaki<\/a> [red bean pancakes].\u201d<\/p>\n<p>And although you\u2019ll find azuki mostly in sweet preparations, there\u2019s one popular savory dish Chen loves to make: a red bean rice called <a href=\"https:\/\/www.justonecookbook.com\/sekihan-japanese-azuki-beans-rice\/\" target=\"_blank\" rel=\"noopener nofollow\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/www.justonecookbook.com\/sekihan-japanese-azuki-beans-rice\/\">sekihan<\/a>.<\/p>\n<h2><strong>What is sekihan (Japanese red bean rice)?\u00a0<\/strong><\/h2>\n<p>It\u2019s true: You\u2019ll typically find red beans in Japanese sweets for the most part. However, Chen notes that sekihan is one exception. \u201cIn Japan, we make red bean rice called sekihan\u2014or osekihan\u2014on auspicious occasions,\u201d she says. \u201cThe red color of the rice symbolizes happiness and prosperity. It\u2019s a traditional dish served on many happy and celebratory occasions, such as Japanese New Year and Children\u2019s Day, the birth of a baby, birthdays, graduations, and weddings.\u201d<\/p>\n<p>To make this simple dish, you only need two ingredients: Rice and red beans. And although the ingredient list sounds simple, the process of making the dish is slightly more complex. \u201cFor the rice, it\u2019s very important to use Japanese short-grain glutinous rice called mochigome when you make sekihan; do not use other Asian long-grain glutinous rice varieties,\u201d Chen says. According to her, using mochigome will ensure the most &#8220;authentic outcome&#8221; in the final dish, as this is the variety that&#8217;s most widely used in Japanese cooking. &#8220;Remember that long-grain and short-grain varieties have different flavors, textures, and shapes when cooked,&#8221; she says.<\/p>\n<p>Fortunately, this type of rice is also widely available in the United States. &#8220;You can find mochigome at Japanese grocery stores, other Asian grocery stores, and some well-stocked supermarkets. I usually get local, California-grown, organic mochigome at my local Japanese supermarket called <a href=\"https:\/\/www.nijiya.com\/\" target=\"_blank\" rel=\"noopener nofollow\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/www.nijiya.com\/\">Nijiya<\/a>. With a little patience (and a few rinses later), the cloudy water will eventually run clear. &#8220;After the final rinse, you\u2019ll drain the rice well in a fine-mesh strainer and shake off the remaining water,&#8221; she says.<\/p>\n<p>For even easier rice rinsing, Chen recommends investing in a <a href=\"https:\/\/clicks.trx-hub.com\/xid\/leafgroup_ca5e0_wellgood?q=https%3A%2F%2Fwww.amazon.com%2FInomata-Japanese-Washing-Bottom-Drainers%2Fdp%2FB004QZAAS2%3Ftag%3Dwgtrx10619-20%26asc_refurl%3Dhttps%253A%252F%252Fwww.wellandgood.com%252Fjapanese-red-bean-rice-recipe%252F%26asc_source%3Ddirect%26asc_campaign%3Dno-campaign&amp;p=https%3A%2F%2Fwww.wellandgood.com%2Fjapanese-red-bean-rice-recipe%2F&amp;event_type=click\" target=\"_blank\" rel=\"noopener nofollow\" referrerpolicy=\"no-referrer-when-downgrade\" data-vars-event=\"body text\" data-vars-click-url=\"https:\/\/www.amazon.com\/Inomata-Japanese-Washing-Bottom-Drainers\/dp\/B004QZAAS2\">Japanese-style bowl<\/a> specialized for this task. They have a gentle and rounded bowl shape but with side and bottom drainers. &#8220;You can use one if you\u2019re worried about losing rice grains when pouring off the rinsing water from a regular bowl,&#8221; she says.<\/p>\n<p>At this point, Chen says you\u2019ll need to pre-soak the glutinous rice (for about 8\u201312 hours) only if you\u2019ll be steaming it\u2014not when cooking it in a pot stovetop or an electric rice cooker. To prep the rice to soak, you can use any type of bowl. The key is simply to ensure the rice is covered with plenty of water so it can absorb it while remaining submerged at the end of the soaking period. &#8220;This ensures an even soak for all the rice grains,&#8221; Chen says.<\/p>\n<p>As for the beans, Chen says it\u2019s not necessary to soak beans hours before cooking them despite what the packaging may say. \u201cWhile soaking the beans for several hours or overnight does help reduce the cooking time slightly, it doesn\u2019t make a significant difference. Therefore, my sekihan recipe does not call for soaking the beans ahead of time,\u201d she says.<\/p>\n<p>However, what <em>does<\/em> make a difference is how fresh the beans are. \u201cLook for dried azuki beans that are fresh so they will become tender when you cook them. Old beans won\u2019t become tender no matter how long you cook them,\u201d Chen says. According to her, the best way to check if the beans are fresh (or old) is by inspecting the expiration date on the packaging. &#8220;Buy azuki beans that are recently packaged and far off from their expiration date,&#8221; she says.<\/p>\n<p>What&#8217;s more, Chen suggests buying azuki beans imported from Hokkaido, Japan\u2014the largest producer of this type of bean\u2014whenever possible. &#8220;Japanese grocery stores sell different brands of azuki bean packages, and they are typically all from Hokkaido. If you are shopping for azuki beans elsewhere, it\u2018s good to check where the azuki beans are from,&#8221; she says. That said, if you can&#8217;t find Hokkaido beans, azuki from Tamba in Hyogo prefecture (which are known to be premium varieties according to Chen) are a great option, too.<\/p>\n<p><figure id=\"attachment_1067031\" aria-describedby=\"caption-attachment-1067031\" style=\"width: 453px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-1067031  js-inline-lazy-load\" alt=\"how to make red beans and rice sekihan\" width=\"453\" height=\"680\" src=\"https:\/\/www.wellandgood.com\/wp-content\/uploads\/2023\/05\/how-to-make-red-beans-and-rice-sekihan_falsexfalse_true_70.webp\"\/><figcaption id=\"caption-attachment-1067031\" class=\"wp-caption-text\">Photo: Just One Cookbook<\/figcaption><\/figure>\n<\/p>\n<h2><strong>Sekihan (red bean rice) recipe<\/strong><\/h2>\n<p><em>Yields 5 servings<\/em><\/p>\n<p><em>Ingredients<\/em><br \/>1\/3 cup azuki beans<br \/>1 1\/2 cup water (for cooking beans #1)<br \/>3 1\/2 cup water (for cooking beans #2)<br \/>2 1\/4 cups sweet rice\/glutinous rice (mochigome)<br \/>1\/2 Tsp Diamond Crystal kosher salt (use half as much for table salt and two-thirds for sea salt by volume)<br \/>1 Tbsp toasted black sesame seeds (or use gomashio, which is a combination of black sesame seeds and salt)<br \/>1\/2 Tsp Diamond Crystal kosher salt for serving<\/p>\n<p><em>To make the beans:<\/em><\/p>\n<ol>\n<li>Rinse azuki beans in the strainer under cold running water and drain well.<\/li>\n<li>Put the azuki beans in a large pot (with a tight-fitting lid) and 1 1\/2 cup water.<\/li>\n<li>Bring it to a boil over medium heat. Once boiling, turn off the heat and drain the beans over the strainer.<\/li>\n<li>Put the beans back in the pot and add 3 1\/2 cup water. Bring it to a boil.<\/li>\n<li>Once it\u2019s boiling, turn down the heat to low\/simmer. Cover and cook for 25\u201330 minutes. (Note: The beans will continue to cook with glutinous rice, so they should be tender but don&#8217;t have to be 100-percent cooked at this stage. I personally prefer the beans to have some texture instead of mushy. Please adjust the cooking time for the beans accordingly.)<\/li>\n<li>Check the doneness of the beans by mashing one bean between your fingers. (As I prefer the beans to have some texture, when I test the bean, the texture should still be somewhat firm, not completely soft. Remove from the heat and let cool to room temperature for roughly one hour. Beans will continue to cook with the remaining heat.)<\/li>\n<\/ol>\n<p><em>To <\/em><em>measure the rice cooking liquid:<\/em><\/p>\n<ol>\n<li>Once the azuki beans and azuki-cooking liquid come to room temperature, separate them. You must have 540 milliliters (about two-and-a-quarter cups) of cooking liquid. If you don&#8217;t have enough, add water to have exactly 540 milliliters.<\/li>\n<\/ol>\n<p><em>To make the rice on the stovetop:<\/em><\/p>\n<ol>\n<li>In a large bowl, place the sweet rice (glutinous rice). Add water to submerge it and quickly discard the water.<\/li>\n<li>Add water and gently rinse the rice three to four more times until the water is clear. Unlike regular white rice, sweet rice breaks easily, so be gentle when you rinse.<\/li>\n<li>For one last time, add water to the bowl and drain the rice into the strainer.
