Well, what\u2019s the best way to <\/span><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0308814608003191\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">cook<\/span><\/a><span data-contrast=\"auto\"> bell peppers? As you can see i<span class=\"notion-enable-hover\" data-token-index=\"0\">n the graph below and a<\/span>t 0:28 in my video <a href=\"https:\/\/nutritionfacts.org\/video\/flashback-friday-best-way-to-cook-vegetables\/\" target=\"_blank\" rel=\"noopener\"><strong>Flashback Friday: Best Way to Cook Vegetables<\/strong><\/a><\/span><span data-contrast=\"auto\">, you can see a chart <\/span><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0308814608003191\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">illustrating<\/span><\/a><span data-contrast=\"auto\"> the antioxidant power of raw green peppers and red peppers. Microwaving or stir-frying doesn\u2019t seem to do much, though, with boiling, there\u2019s a drop. If you then measure the antioxidant activity of the leftover boiling water, you\u2019ll find that the antioxidants weren\u2019t destroyed. They were just leached out into the cooking water. So, the researchers\u2019 conclusion is that it\u2019s \u201cvital to <\/span><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0308814608003191\" target=\"_blank\" rel=\"noopener\"><span data-contrast=\"none\">consume<\/span><\/a><span data-contrast=\"auto\"> the water used for boiling in addition to the peppers, as bioactive compounds will be present in the water.\u201d But that\u2019s not the take-away I get from this study. Whether or not you drink the cooking water, red peppers have nearly twice the antioxidant power of green peppers no matter what. <\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">\u201c<\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">Since cooking techniques <\/span><span class=\"NormalTextRun ContextualSpellingAndGrammarErrorV2Themed SCXW11696602 BCX0\">clearly<\/span> <\/span><a class=\"Hyperlink SCXW11696602 BCX0\" href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27760471\/\" target=\"_blank\" rel=\"noreferrer noopener\"><span class=\"TextRun Underlined SCXW11696602 BCX0\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"none\"><span class=\"NormalTextRun SCXW11696602 BCX0\" data-ccp-charstyle=\"Hyperlink\">influence<\/span><\/span><\/a><span class=\"TextRun SCXW11696602 BCX0\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"auto\"><span class=\"NormalTextRun SCXW11696602 BCX0\"> the nutritional attributes of mushrooms, the proper <\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">selection<\/span><span class=\"NormalTextRun SCXW11696602 BCX0\"> of <\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">treatments is a<\/span><span class=\"NormalTextRun SCXW11696602 BCX0\"> key factor to prevent<\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">\/<\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">reduce nutritional losses.<\/span><span class=\"NormalTextRun SCXW11696602 BCX0\"> M<\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">icrowaving and grilling were <\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">established<\/span><span class=\"NormalTextRun SCXW11696602 BCX0\"> as the best processes to <\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">maintain<\/span><span class=\"NormalTextRun SCXW11696602 BCX0\"> the nutritional profile of mushrooms.<\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">\u201d<\/span> <span class=\"NormalTextRun SCXW11696602 BCX0\">According to researchers, a \u201c<\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">significant decrease was detected in the antioxidant activity especially after boiling and frying, while grilled and microwaved mushrooms reached higher <\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">values of <\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">antioxidant activity.<\/span><span class=\"NormalTextRun SCXW11696602 BCX0\">\u201d<\/span><\/span><span class=\"EOP SCXW11696602 BCX0\" data-ccp-props=\"{}\">\u00a0<\/span><\/p>\n<p class=\"p1\"><span class=\"TextRun SCXW156624700 BCX0\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"auto\"><span class=\"NormalTextRun SCXW156624700 BCX0\">Boiling <\/span><\/span><a class=\"Hyperlink SCXW156624700 BCX0\" href=\"https:\/\/www.hindawi.com\/journals\/bmri\/2013\/367819\/\" target=\"_blank\" rel=\"noreferrer noopener\"><span class=\"TextRun Underlined SCXW156624700 BCX0\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"none\"><span class=\"NormalTextRun SCXW156624700 BCX0\" data-ccp-charstyle=\"Hyperlink\">had<\/span><\/span><\/a><span class=\"TextRun SCXW156624700 BCX0\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"auto\"><span class=\"NormalTextRun SCXW156624700 BCX0\"> a similar negative impact on the antioxidant power of cauliflower, which serves as <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">a <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">kind of rough proxy for how many phytonutrients of potential benefit we might be losing<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">, but<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">, as you can see in the graph below and at 1:56 in my <\/span><\/span><strong><a class=\"Hyperlink SCXW156624700 BCX0\" href=\"https:\/\/nutritionfacts.org\/video\/best-way-to-cook-vegetables\/\" target=\"_blank\" rel=\"noreferrer noopener\"><span class=\"TextRun Underlined MacChromeBold SCXW156624700 BCX0\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"none\"><span class=\"NormalTextRun SCXW156624700 BCX0\" data-ccp-charstyle=\"Hyperlink\">video<\/span><\/span><\/a><\/strong><span class=\"TextRun SCXW156624700 BCX0\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"auto\"><span class=\"NormalTextRun SCXW156624700 BCX0\">, blanching<\/span> <\/span><a class=\"Hyperlink SCXW156624700 BCX0\" href=\"https:\/\/www.hindawi.com\/journals\/bmri\/2013\/367819\/\" target=\"_blank\" rel=\"noreferrer noopener\"><span class=\"TextRun Underlined SCXW156624700 BCX0\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"none\"><span class=\"NormalTextRun SCXW156624700 BCX0\" data-ccp-charstyle=\"Hyperlink\">was<\/span><\/span><\/a><span class=\"TextRun SCXW156624700 BCX0\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"auto\"><span class=\"NormalTextRun SCXW156624700 BCX0\"> better<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">. C<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">auliflower was dunked into boiling water for three minutes and then run under <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">cold water<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\"> to stop it from cooking. I had never heard of steam blanching, but <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">that<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\"> has<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\"> the <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">same idea. Steam <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">the cauliflower <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">for three minutes <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">and t<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">hen cool <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">it <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">off, which <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">appears to be<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\"> better since <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">you\u2019re<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\"> not immersing it in water. <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">Note, t<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">hough<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">,<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\"> that<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\"> there<\/span> <span class=\"NormalTextRun SCXW156624700 BCX0\">isn\u2019t<\/span> <span class=\"NormalTextRun SCXW156624700 BCX0\">much difference between steaming for six minutes and steaming for three<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\"> minutes<\/span> <span class=\"NormalTextRun SCXW156624700 BCX0\">before<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\"> running <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">the veg <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">under <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">cold water<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">. <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">It\u2019s<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\"> t<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">oo bad the<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\"> researchers<\/span> <span class=\"NormalTextRun SCXW156624700 BCX0\">didn\u2019t<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\"> look at roasting<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">. I think <\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">that\u2019s<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\"> how you can really make cauliflower taste <\/span><span class=\"NormalTextRun AdvancedProofingIssueV2Themed SCXW156624700 BCX0\">really <\/span><span class=\"NormalTextRun AdvancedProofingIssueV2Themed SCXW156624700 BCX0\">good<\/span><span class=\"NormalTextRun SCXW156624700 BCX0\">.
