Since the flavors of this dish intensify over time, it\u2019s perfect for leftovers.<\/span><\/p>\n<p><b>Active time:<\/b><span style=\"font-weight: 400\"> 10 minutes <\/span><b>Total time:<\/b><span style=\"font-weight: 400\"> 45 minutes<\/span><\/p>\n<h2><strong>Chickpea Vegetable Curry<\/strong><\/h2>\n<p><b>Ingredients:<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 15-oz (878g) cans chickpeas<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 lb (454g) frozen broccoli\/cauliflower\/carrot blend<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 bell pepper, diced<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 15-oz (450g) can lite coconut milk<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tbsp curry paste<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tsp curry powder<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 cup (185g) brown rice<\/span><\/li>\n<\/ul>\n<p><b>Directions:<\/b><\/p>\n<p><span style=\"font-weight: 400\">Place all ingredients except brown rice in a large pot and simmer until heated through and slightly thickened, about 20 minutes.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400\">While curry cooks, combine rice and 2 cups of salted water in a medium pot and bring to a boil. Once boiling, reduce the heat to low, cover tightly, and simmer for 35\u201340 minutes, or until the water is absorbed and the rice is tender.
