Stirring in cooked farro gives it a perfect combination of creamy soup and chewy grains.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-49418\" src=\"https:\/\/blog.myfitnesspal.com\/wp-content\/uploads\/2021\/02\/Copy-of-UACF-rdtip-inline2..jpg\" alt=\"RD Tip\" width=\"1504\" height=\"250\" \/><\/p>\n<p><span style=\"font-weight: 400\">Farro is great for a vegetarian diet because it has one of the highest protein contents of all the grains, at <\/span><a href=\"https:\/\/fdc.nal.usda.gov\/food-details\/2710828\/nutrients\"><span style=\"font-weight: 400\">6g per 1\/4-cup<\/span><\/a><span style=\"font-weight: 400\"> (dry) serving.<\/span><\/p>\n<p><b>Active time: <\/b><span style=\"font-weight: 400\">20 minutes | <\/span><b>Total time:<\/b><span style=\"font-weight: 400\"> 30 minutes<\/span><\/p>\n<h2><strong>Creamy Vegan Kale and Farro Soup<\/strong><\/h2>\n<p><strong>Ingredients<\/strong><\/p>\n<p><span style=\"font-weight: 400\">\u2022 1\/4 cup (52g) farro, dry<\/span><span style=\"font-weight: 400\"><br \/>\n<\/span><span style=\"font-weight: 400\">\u2022 1 tbsp olive oil<\/span><span style=\"font-weight: 400\"><br \/>\n<\/span><span style=\"font-weight: 400\">\u2022 1 yellow onion, diced<\/span><span style=\"font-weight: 400\"><br \/>\n<\/span><span style=\"font-weight: 400\">\u2022 1 large garlic clove, minced<\/span><span style=\"font-weight: 400\"><br \/>\n<\/span><span style=\"font-weight: 400\">\u2022 2 cups vegetable stock<\/span><span style=\"font-weight: 400\"><br \/>\n<\/span><span style=\"font-weight: 400\">\u2022 1 cup Yukon Gold potato, diced<\/span><span style=\"font-weight: 400\"><br \/>\n<\/span><span style=\"font-weight: 400\">\u2022 8 oz. kale, stems removed, roughly chopped<\/span><span style=\"font-weight: 400\"><br \/>\n<\/span><span style=\"font-weight: 400\">\u2022 1 tsp dried thyme<\/span><span style=\"font-weight: 400\"><br \/>\n<\/span><span style=\"font-weight: 400\">\u2022 1 tsp lemon juice, or more to taste<\/span><\/p>\n<p><strong>Directions<\/strong><\/p>\n<p><span style=\"font-weight: 400\">Place 2 cups of water in a small pot and bring to a boil. Add the farro and cook for about 20 minutes if using pearled farro, or up to 1 hour if using whole farro. When tender, drain and set aside.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Heat 1 tbsp olive oil in a large pot over medium-high heat. Add the onion. Once it starts to sizzle, reduce the heat to medium-low and cook, stirring occasionally, until the onion is soft and golden, at least 5 minutes. Add the garlic and cook, stirring, for 1 minute. Add the stock and potato, then increase the heat to high.<\/span><\/p>\n<p><span style=\"font-weight: 400\">When the stock comes to a boil, cover, reduce the heat, and simmer for 10 minutes. When the potatoes are tender, add 1\/4 cup water, kale, and thyme, and cook for 5 minutes longer.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Transfer the contents of the pot to a blender or food processor and puree until very smooth.
