Then, top with fresh berries and enjoy a hearty, lightly sweetened, whole-grain breakfast.<\/span><\/p>\n<p><b>Active time:<\/b><span style=\"font-weight: 400\"> 10 minutes <\/span><b>Total time:<\/b><span style=\"font-weight: 400\"> 45 minutes<\/span><\/p>\n<p><strong>Vegan Cinnamon-Apple Baked Oatmeal<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 1\/2 cups old-fashioned oats<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 tsp ground cinnamon<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tsp baking powder<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/2 tsp salt<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 1\/4 cups unsweetened soy milk<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 sweet apples, grated and unpeeled (such as Honeycrisp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 tbsp maple syrup<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 1\/2 tsp vanilla extract<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/2 cup walnuts, chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 cups strawberries, sliced<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 cup raspberries<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 cup blackberries<\/span><\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p><span style=\"font-weight: 400\">Preheat the oven to 375\u00b0F (190\u00b0C) and lightly coat an 11-by-7-inch glass baking dish with cooking spray.<\/span><\/p>\n<p><span style=\"font-weight: 400\">In a large bowl, combine the oats, cinnamon, baking powder, and salt. Add the almond milk, grated apple, maple syrup, and vanilla extract, and stir until well mixed. Pour the mixture into the prepared baking dish and spread it evenly. Sprinkle the chopped walnuts over the top. Bake for about 35 minutes, or until the oatmeal is set and lightly golden.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400\">Meanwhile, in a small bowl, gently combine the strawberries, raspberries, and blackberries. Divide into 6 small airtight containers.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Let stand for 5\u201310 minutes before cutting into six pieces. Let cool completely, then store each piece in an airtight container for easy transport.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400\">To reheat, place in the microwave for 60-90 seconds, or until hot.
