These breakfast muffins bake up as complete meals that you can quickly reheat for breakfast.<\/span><\/p>\n<p><b>Active time: <\/b><span style=\"font-weight: 400\">20 minutes<\/span><b> Total time: <\/b><span style=\"font-weight: 400\">60 minutes<\/span><\/p>\n<p><strong>Bacon, Egg &amp; Spinach Breakfast Muffins<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 (10oz. or 280g) package frozen chopped spinach, thawed<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">4 slices 100% whole-wheat bread, cubed<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 tbsp olive oil<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 cup cheddar cheese, shredded\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">3 green onions, chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/2 tsp garlic powder<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 tsp salt<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/2 tsp black pepper<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">4 slices cooked bacon, roughly chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">5 large eggs<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 1\/4 cups low-fat milk<\/span><\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p><span style=\"font-weight: 400\">Preheat the oven to 375\u00b0F (190\u00b0C). Lightly coat a 12-cup muffin tin (or two 6-cup tins) with cooking spray and set aside.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Place the thawed spinach in a mesh strainer and squeeze out as much excess water as possible. Set aside.<\/span><\/p>\n<p><span style=\"font-weight: 400\">In a large bowl, toss the cubed bread with the olive oil until lightly coated. Add the spinach, cheddar cheese, green onions, garlic powder, salt, black pepper, and chopped bacon, and mix until well combined. Divide the mixture evenly among the muffin cups.<\/span><\/p>\n<p><span style=\"font-weight: 400\">In the same bowl, whisk together the eggs and milk until smooth. Pour the egg mixture evenly over the bread mixture in each muffin cup.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Bake for 30\u201340 minutes, or until the tops are golden and the centers are set. A skewer inserted into the center should come out clean. Let the muffins cool slightly before serving.<\/span><\/p>\n<p><b>Storage:<\/b><span style=\"font-weight: 400\"> Once completely cooled, transfer the muffins to an airtight container and refrigerate for up to 4 days.
