MyFitnessPal Blog\" \/><\/p>\n<p><span style=\"font-weight: 400\">If you like a quick breakfast of scrambled egg whites, you\u2019ll love them with slivered, browned Brussels sprouts and savory smoked salmon.\u00a0 Paired with whole grain toast to make it a complete meal, and you\u2019re ready to take on the day!<\/span><\/p>\n<p><strong>Smoked Salmon &amp; Brussels Sprout Scrambled Egg Whites<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">8 egg whites<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u00bc tsp salt<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u00bc tsp black pepper<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tsp olive oil<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 lb brussels sprouts, thinly sliced<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">4 oz smoked salmon, roughly chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 cup grape tomatoes, halved<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 cup fresh parsley, roughly chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 cup salsa<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">4 slices whole grain bread, toasted<\/span><\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p><span style=\"font-weight: 400\">In a small bowl, whisk together the egg whites, salt and pepper and set aside.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Place a large, nonstick saute pan over medium-high heat for a few seconds, then add the oil. Add the Brussels sprout and saute, stirring occasionally, until browned and softened, about 4 minutes. Add the egg whites and smoked salmon and lower the heat to medium-low, and stir to combine.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Cook until the eggs form curds, then add tomatoes and parsley and stir until the eggs are cooked through and the tomatoes are warmed.
