Chipotle adds a hint of smoky spice that makes it seem meaty, and the black beans lend a creamy, hearty texture.<\/p>\n<p><strong>Active time:<\/strong> 15 minutes <strong>Total time:<\/strong> 20 minutes<\/p>\n<h2><strong>Cauliflower Black Bean Tacos<\/strong><\/h2>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">6 corn tortillas<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">4 cups (400g) cauliflower<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tsp olive oil<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 cloves garlic, chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tsp chipotle powder<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 tsp salt<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 (15 oz.) can no-salt black beans, rinsed and drained<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 cup (40g) green onions, chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 large tomatoes, chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 cup (15g) cilantro, coarsely chopped<\/span><\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p><span style=\"font-weight: 400\">Preheat the oven to 400\u00baF (200\u00baC), and wrap the tortillas in foil. Heat the tortillas for 10 min.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Place the cauliflower in a food processor and pulse until chopped to the size of ground beef.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Coat a large saute pan with olive oil and place over medium-high heat; add the cauliflower. Cook, stirring frequently for about 5 min., until the cauliflower is tender and the pan is dry.
