Boost the protein even more with some edamame to make this a complete meal.<\/span><\/p>\n<p><strong>Active Time:<\/strong> 10 minutes <strong>Total time:<\/strong> 10 minutes<\/p>\n<p><strong>Vegan Green Goddess Salad<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><em>For the dressing<\/em><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 medium avocado, pit and peel discarded<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 cup (14g) mixed tender herbs such as basil, chives, dill or tarragon, chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 cup (59ml) lemon juice<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tbsp maple syrup<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tbsp olive oil<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tbsp tahini<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 small garlic clove, peeled<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 tsp salt<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 tsp black pepper<\/span><\/li>\n<\/ul>\n<p><em>For the salad<\/em><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 7 oz. (198g) bag mixed baby greens with radicchio<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 cup (14g) mixed tender herbs such as basil, chives, dill or tarragon, chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 cup (85g) cherry tomatoes, halved<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 cup (170g) roasted beets, peeled and sliced<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/2 cucumber, halved lengthwise and thinly sliced<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/2 cup (57g) toasted sunflower seeds<\/span><\/li>\n<\/ul>\n<p><strong>Directions <\/strong><\/p>\n<p><span style=\"font-weight: 400\">Combine the avocado flesh, herbs, lemon juice, maple syrup, garlic and salt in a blender. Add 1\/4 cup (59ml) water and blend until smooth.<\/span><\/p>\n<p><span style=\"font-weight: 400\">For the salad, toss the greens, herbs and 1\/2 cup (118ml) of the dressing together and mound the salad on four plates. Arrange the cherry tomatoes, beets and cucumbers on top. Dot each salad with the remaining dressing.
