This balanced breakfast gives you enough carbohydrates to fuel your energy in the morning, plus lots of fiber and protein to keep you full longer. It\u2019s also easy to double or triple this recipe if you\u2019re expecting company.<\/p>\n<p>Active time: 20 minutes Total time: 20 minutes<\/p>\n<p><strong>Avocado and Egg Breakfast Tacos<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>4 corn tortillas<\/li>\n<li>1 cup (180g) chopped fresh tomato<\/li>\n<li>1 large jalape\u00f1o, seeded and chopped<\/li>\n<li>2 green onions, chopped<\/li>\n<li>1\/2 cup (8g) fresh cilantro, chopped<\/li>\n<li>2 tsp fresh lime juice<\/li>\n<li>1 large egg<\/li>\n<li>4 large egg whites<\/li>\n<li>1 tbsp olive oil<\/li>\n<li>1\/2 tsp hot sauce<\/li>\n<li>1 medium avocado, sliced<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p><span style=\"font-weight: 400\">Preheat oven to 200\u00baF (93\u00baC).<\/span><\/p>\n<p><span style=\"font-weight: 400\">Wrap the tortillas in foil and warm in the preheated oven while you prepare the filling.<\/span><\/p>\n<p><span style=\"font-weight: 400\">To make the salsa: In a medium bowl, combine the tomatoes, jalape\u00f1o, green onion, cilantro and lime juice. Stir to mix. Set aside.<\/span><\/p>\n<p><span style=\"font-weight: 400\">To make the eggs: In a medium bowl, whisk the egg and egg whites. Place a medium saute pan over medium heat and let warm for a few seconds, then add olive oil. Once hot, add the egg mixture and scramble, turning with a spatula as it cooks. When cooked through, season with hot sauce.<\/span><\/p>\n<p><span style=\"font-weight: 400\">To assemble the tacos:\u00a0 Place two tortillas on each plate, and divide the eggs between them.
