Pair with your favorite whole grain and crunchy vegetable for a delicious, balanced meal!<\/span><\/p>\n<p><strong>Roasted Salmon With Mandarin Salsa<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2, 4-ounce salmon fillets<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tsp chili powder<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 tsp kosher salt<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 mandarin oranges, peeled and chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 jalape\u00f1o pepper, chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 tbsp scallion, chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tbsp fresh lime juice<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 tbsp fresh cilantro, chopped<\/span><\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<p><span style=\"font-weight: 400\">Preheat the oven to 400\u00baF (204\u00baC). Place the salmon fillets on a small baking pan, skin-side down. In a cup, mix the chili powder and salt and sprinkle over the salmon. Roast for about 12-15 minutes, or until it reaches an internal temperature of 145\u00baF<\/span><\/p>\n<p><span style=\"font-weight: 400\">For salsa, combine the oranges, jalape\u00f1o, scallion, lime and cilantro in a small bowl and stir to combine.
