Here\u2019s why.<\/p>\n<p>\u201cThe main fatty acid in olive oil is oleic acid,\u201d explains the evidence-lead health and nutrition expert in a recent Instagram post in association with the <a href=\"https:\/\/ncicertifications.com\/\" target=\"_blank\" rel=\"noopener\">Nutritional Coaching Institute<\/a>. \u201cAnd this is a mono unsaturated fatty acid, and in the <a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/10.1155\/2021\/7319013\" target=\"_blank\" rel=\"noopener\">peer reviewed literature<\/a>, it\u2019s been shown to be surprisingly stable under high heat conditions, including deep frying.\u201d<\/p>\n<p>Argon explains that the notion that the oil reacts badly to heat is a myth. Furthermore, he says that the abundance of vitamin E in extra virgin olive oil is another positive feature of cooking with it. \u201cThe antioxidant content of olive oil prevents the excess production of oxidation products people are afraid of regarding the use of unsaturated fats for cooking,\u201d explains the popular coach.<\/p>\n<h2>Why You Should Consider Cooking with Olive Oil<\/h2>\n<p>Okay, so we know that the oil is a stable unsaturated fat when it comes to cooking, but how does it compare with saturated options? \u201c\u2026 when it\u2019s compared with using saturated fat rich oils like lard, butter, it has a much more favorable effect on cardiovascular risk factors as well as mortality and cardio vascular disease,\u201d says Argon. Indeed, there\u2019s evidence to back this up.<\/p>\n<p>A <a href=\"https:\/\/pmc.ncbi.nlm.nih.gov\/articles\/PMC8048052\/\" target=\"_blank\" rel=\"noopener\">2021 study<\/a> found that intakes of butter and margarines were associated with more deaths than canola or olive oil. \u201cOur findings support the shifting intake from solid fats to non-hydrogenated vegetables oils for cardiometabolic health and longevity,\u201d concluded the report. \u201cSo, as far as cooking goes, extra virgin olive oil is the win-win.
