{"id":10100,"date":"2024-03-12T19:18:18","date_gmt":"2024-03-12T12:18:18","guid":{"rendered":"https:\/\/loudhdtv.com\/?p=10100"},"modified":"2024-03-12T19:18:18","modified_gmt":"2024-03-12T12:18:18","slug":"pre-cut-vegetables-and-endotoxins","status":"publish","type":"post","link":"https:\/\/loudhdtv.com\/?p=10100","title":{"rendered":"Pre-Cut Vegetables and Endotoxins\u00a0"},"content":{"rendered":"<p> <script async src=\"https:\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js?client=ca-pub-3711241968723425\"\r\n     crossorigin=\"anonymous\"><\/script><br \/>\n<\/p>\n<div>\n<p>Endotoxins can build up on pre-cut vegetables and undermine some of their benefits.<\/p>\n<p>You may remember when I introduced the endotoxin theory literature in my video <a href=\"https:\/\/nutritionfacts.org\/video\/the-exogenous-endotoxin-theory\/\" target=\"_blank\" rel=\"noopener\"><strong>The Exogenous Endotoxin Theory<\/strong><\/a>, which sought to explain how a single Sausage and Egg McMuffin meal could <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/9036757\/\" target=\"_blank\" rel=\"noopener\">cripple<\/a> artery function within hours of consumption. Maybe it\u2019s because such a meal <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/17991637\/\" target=\"_blank\" rel=\"noopener\">causes<\/a> inflammation within hours of consumption by inducing low-grade endotoxemia, endotoxins in the bloodstream, as I previously discussed in my video <a href=\"https:\/\/nutritionfacts.org\/video\/dead-meat-bacteria-endotoxemia\/\" target=\"_blank\" rel=\"noopener\"><strong>Dead Meat Bacteria Endotoxemia<\/strong><\/a>. Endotoxins <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24031006\/\" target=\"_blank\" rel=\"noopener\">are<\/a> structural components of gram-negative bacteria like <em>E. coli<\/em>, as you can see below and at 0:35 in my video <a href=\"https:\/\/nutritionfacts.org\/video\/friday-favorites-are-pre-cut-vegetables-just-as-healthy\/\" target=\"_blank\" rel=\"noopener\"><strong>Are Pre-Cut Vegetables Just as Healthy?<\/strong><\/a>. Certain foods, like ground meat, <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/20849668\/\" target=\"_blank\" rel=\"noopener\">have<\/a> high bacterial loads, so the thought was that the endotoxins in the food were <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/396886\/\" target=\"_blank\" rel=\"noopener\">triggering<\/a> the inflammation.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-102938\" src=\"https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/0-35.png\" alt=\"\" width=\"1920\" height=\"1080\" srcset=\"https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/0-35.png 1920w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/0-35-960x540.png 960w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/0-35-1024x576.png 1024w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/0-35-768x432.png 768w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/0-35-1536x864.png 1536w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/0-35-480x270.png 480w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/0-35-1200x675.png 1200w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/0-35-720x405.png 720w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/0-35-540x304.png 540w\" sizes=\"auto, (max-width: 1920px) 100vw, 1920px\"\/><\/p>\n<p>Critics of the theory <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26803597\/\" target=\"_blank\" rel=\"noopener\">argued<\/a> that because we already have so many bacteria living in our colon, so many endotoxins just sitting down in our large intestine, a few more endotoxins in our food wouldn\u2019t matter much in terms of causing systemic inflammation. After all, we <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30345085\/\" target=\"_blank\" rel=\"noopener\">have<\/a> about two pounds of pure bacteria down there where the sun don\u2019t shine, so there could be about a whole ounce of endotoxin. The lethal dose of intravenously injected endotoxin can be just a few millionths of a gram, so we could have a million lethal doses down there. However, the apparent paradox is explained by compartmentalization. It\u2019s location, location, location.<\/p>\n<p>Poop is harmless when it\u2019s in your colon, but it shouldn\u2019t be injected into your bloodstream or eaten for that matter, particularly with fat, as that can <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/18815435\/\" target=\"_blank\" rel=\"noopener\">promote<\/a> the absorption of endotoxins in the small intestine. That goes for well-cooked poop, too.<\/p>\n<p>As you can see in the graph below and at 1:44 in my <a href=\"https:\/\/nutritionfacts.org\/video\/friday-favorites-are-pre-cut-vegetables-just-as-healthy\/\" target=\"_blank\" rel=\"noopener\"><strong>video<\/strong><\/a>, you can <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/20849668\/\" target=\"_blank\" rel=\"noopener\">boil<\/a> endotoxins for two hours straight with no detriment in their ability to induce inflammation. You could easily kill off any bacteria if you boiled your poop soup long enough, but you can\u2019t kill off the endotoxins they make, just like you can\u2019t <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/19397721\/\" target=\"_blank\" rel=\"noopener\">cook<\/a> the crap out of the meat. The consumption of meat contaminated with feces doesn\u2019t just cause food poisoning. It can spill out onto the animal\u2019s skin during the evisceration process when the digestive tract is ruptured.\u00a0<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-102940\" src=\"https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/1-44.png\" alt=\"\" width=\"1920\" height=\"1080\" srcset=\"https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/1-44.png 1920w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/1-44-960x540.png 960w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/1-44-1024x576.png 1024w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/1-44-768x432.png 768w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/1-44-1536x864.png 1536w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/1-44-480x270.png 480w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/1-44-1200x675.png 1200w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/1-44-720x405.png 720w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/1-44-540x304.png 540w\" sizes=\"auto, (max-width: 1920px) 100vw, 1920px\"\/><\/p>\n<p>Even when slaughterhouse workers <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/25364917\/\" target=\"_blank\" rel=\"noopener\">trim<\/a> off \u201cvisible fecal contamination,\u201d the trimming itself can, ironically, sometimes lead to an increase in certain fecal bacteria, thought to be caused by \u201ccross-contamination resulting from the handling to removal fecal contamination\u201d from one carcass to the next. Then, even when properly stored in the fridge, endotoxins start <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21535770\/\" target=\"_blank\" rel=\"noopener\">accumulating<\/a> along with the bacterial growth, as you can see in the graph below and at 2:30 in my <a href=\"https:\/\/nutritionfacts.org\/video\/friday-favorites-are-pre-cut-vegetables-just-as-healthy\/\" target=\"_blank\" rel=\"noopener\"><strong>video<\/strong><\/a>.\u00a0<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-102944\" src=\"https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/2-30.png\" alt=\"\" width=\"1920\" height=\"1080\" srcset=\"https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/2-30.png 1920w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/2-30-960x540.png 960w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/2-30-1024x576.png 1024w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/2-30-768x432.png 768w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/2-30-1536x864.png 1536w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/2-30-480x270.png 480w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/2-30-1200x675.png 1200w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/2-30-720x405.png 720w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/2-30-540x304.png 540w\" sizes=\"auto, (max-width: 1920px) 100vw, 1920px\"\/><\/p>\n<p>What about other foods? The highest levels of endotoxins were <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21376773\/\" target=\"_blank\" rel=\"noopener\">found<\/a> in meat and dairy, and the lowest levels in fresh fruits and vegetables. That was testing whole fruits and vegetables, though. \u201cMost spoilage organisms cannot <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/15839403\/\" target=\"_blank\" rel=\"noopener\">penetrate<\/a> the plant\u2019s surface barrier and spoil the inner tissues.\u201d That\u2019s why fruits and veggies can sit out in the fields all day in the sun. But, once you cut them open, bacteria can gain access to the inner tissues, and, within a matter of days, your veggies can start to spoil. So, what does that mean for all those convenient pre-cut veggies these days?<\/p>\n<p>While endotoxins were not detectable in the majority of unprocessed vegetables, once you <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21376773\/\" target=\"_blank\" rel=\"noopener\">damage<\/a> the protective outer layers of vegetables, you diminish their resistance to microbial growth. So, while freshly cut carrots and onions start with undetectable levels, day after day after they\u2019ve been chopped, you start to get the growth of bacteria and, along with them, endotoxin buildup\u2014even if they\u2019ve been kept chilled in the fridge. Not as much as meat, but not insignificant either, as you can see in the graph below and at 3:27 in my<a href=\"https:\/\/nutritionfacts.org\/video\/friday-favorites-are-pre-cut-vegetables-just-as-healthy\/\" target=\"_blank\" rel=\"noopener\"><strong> video<\/strong><\/a>. Enough to make a difference, though? For instance, going from intact meat, such as a steak, and whole fruits and vegetables, to more like ground beef, pre-cut veggies, and more ready-made meals, as shown below and at 3:39 in my <a href=\"https:\/\/nutritionfacts.org\/video\/friday-favorites-are-pre-cut-vegetables-just-as-healthy\/\" target=\"_blank\" rel=\"noopener\"><strong>video<\/strong><\/a>. After just one week on the lower-endotoxin diet, people\u2019s white blood cell count, which is an indicator of total body inflammation, <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26803597\/\" target=\"_blank\" rel=\"noopener\">dropped<\/a> by 12 percent, then bumped back up by 14 percent after just four days on the higher-endotoxin diet. They also lost a pound and a half on the lower-endotoxin diet and slimmed their waists a bit.\u00a0<img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-102948\" src=\"https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/3-39.png\" alt=\"\" width=\"1920\" height=\"1080\" srcset=\"https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/3-39.png 1920w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/3-39-960x540.png 960w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/3-39-1024x576.png 1024w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/3-39-768x432.png 768w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/3-39-1536x864.png 1536w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/3-39-480x270.png 480w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/3-39-1200x675.png 1200w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/3-39-720x405.png 720w, https:\/\/nutritionfacts.org\/app\/uploads\/2024\/03\/3-39-540x304.png 540w\" sizes=\"auto, (max-width: 1920px) 100vw, 1920px\"\/><\/p>\n<p>They weren\u2019t eating otherwise identical diets, though. It looks like they were eating more meat and cheese on the higher-endotoxin diet and perhaps getting more food additives in the ready-made meals. So, how do we know endotoxins had anything to do with it? That\u2019s where the onion study comes in. Another study was designed based on two meals that differed in their content of bacterial products but were otherwise nutritionally identical. So, researchers compared freshly chopped onion to prechopped onion that had been refrigerated for a few days. The pre-chopped onion wasn\u2019t spoiled; it was still before the \u201cbest before\u201d date. So, would it make any difference?<\/p>\n<p>Within three hours of consumption, the fresh onion meal caused significant reductions in several markers of in\ufb02ammation. That\u2019s what fruits and vegetables do\u2014they reduce inflammation\u2014but these effects were not observed after eating the pre-chopped onions. For example, three hours after eating freshly chopped onions, researchers saw a significant drop in inflammatory status, but there was no significant change three hours after eating the same amount of pre-chopped onions, as you can see in the graph below and at 5:06 in my <a href=\"https:\/\/nutritionfacts.org\/video\/friday-favorites-are-pre-cut-vegetables-just-as-healthy\/\" target=\"_blank\" rel=\"noopener\"><strong>video<\/strong><\/a>.
